Henderson Weekend

This past weekend closely mirrored our 4th of July celebration since it was spent on the water and with Brett’s co-worker Toby.  On Saturday morning, Brett and I packed up an overnight bag and headed out to Henderson, LA. Toby invited us to spend the day and night with he and Blair at a house boat he rented for the weekend.

We spent the majority of Saturday on the water under beautiful, clouded skies. It was beaming hot over the weekend, so we were extremely thankful for cloud coverage when it occurred.

As soon as we made it to the house boat, I quickly mixed up a Dark and Stormy to sip on throughout the day. This was the first time I’d ever mixed one, and I must say I was highly impressed. I simply filled a large cup with crushed ice, then added spiced rum to the half way point of the cup, then filled the rest of the cup with ginger beer. I had a little bit of trouble finding ginger beer, but was finally able to locate it at World Market. This was the perfect drink to enjoy in the sun without feeling too full…too quickly. Just be careful not to sling back this drink too fast as it is a bit strong.

Once we cruised around for a bit in the boat, we found a resting spot in order to take a dip into the water. In order to lounge in the water safely, we placed life vest on our bottom regions like a diaper. I love diaper diving, since treading water is unnecessary because the vest allows you to float. And placing it on your bum is way more practical since it doesn’t make you feel suffocated.

I know, dead sexy, right? Ha, oh well, it served the purpose!

As lunch time grew closer, we headed back to the house boat in order for Toby to grill us up some sausage and pork steaks. Brett also did a bit of fishing but did not catch anything unfortunately.

We love the weekends…especially when we can spend them together!

There were so many lilly pads near the houseboat…possibly why Brett did not catch any fish. Brett and Toby tried their best to clear the lilies from our canal and were semi-successful.

As the sun was setting, we decided to take the boat out for a sunset cruise. We diaper dove one last time as we admired the beautiful Louisiana scenery as the sun went down.

I don’t think it gets much better than that guys. Thanks again to Toby for the wonderful weekend. We always appreciate the opportunity to do some of our favorite activities on the water.

We headed back to Lafayette on Sunday and spent the entire day cleaning our home. Brett also repositioned my curtain rod in the master bedroom. I received my curtains from Pottery Barn on Friday, and I was beyond eager to put them up. Unfortunately, Pottery Barn’s curtains have an extra tab on each of their panels, so I’ll need to swing by Bed, Bath and Beyond at some point to pick up more clip rings. I’ll try to dedicate an entire post to our new curtains once they are complete.

The picture below was taken at the retirement luncheon I put together for all of our past retirees last week. This event is hands down my favorite event to piece together for the company. Most of those that have retired have dedicated at least 20+ years of service to the company (the most being 64 years), and it is truly an honor to see all of them reunite with some of their best friends that they consider family. I always get a bit emotional for the event as it reminds me of how lucky I am to have found a job that I honestly love.

I decided to mention the event in this post since my new favorite salad was part of the lunch spread that day. I made this salad along with my Chicken Avocado Soup both last night and today for lunch. It’s so yummy and full of nutrients. Check out the easy recipe.

Spinach and Almond Salad

Two large handfuls of spinach
1/8 of a red onion sliced thin
Handful of sliced almonds
4-5 walnuts crumbled
Handful of dried cranberries
Drizzle of Kraft Balsamic Vinaigrette Dressing

Combine into a bowl, toss, then enjoy!

I’ve been enjoying the salad as a side, but this could easily be revamped into a larger meal by adding more of each ingredient and tossing grilled chicken into the mix.
