Good evening friends!
I hope you all had a fun and relaxing weekend. I was a bit of a busy bee since I travelled to New Orleans with my bridesmaids to shop for bridesmaid dresses. We luckily found their dresses pretty quickly, and everyone was able to get fitted that day as well. The rest of my weekend was spent in Morgan City with Brett’s family, and yesterday evening I was able to squeeze in my Sunday rituals of grocery shopping and ironing.
As we kick off the week, I’d like to share with you guys some recipes that I tried last week. It seemed like most of my meals involved eggs or egg whites, so I definitely got my source of protein over the past few days.
First up was oatmeal with egg whites. I decided to add egg whites for extra staying power. This meal was filling, and left me satisfied until lunchtime. I simply added half of a cup of old fashioned oats, two egg whites and half a cup of almond milk to a bowl. I placed in the microwave for three minutes, stirring after one minute and fifteen seconds…then stirring again every 30 seconds until the time ran out. Be sure to place the ingredients in a large enough bowl since the oatmeal will grow in the microwave. If you’re using too small of a bowl, you will likely end up with a mess. In total, the oatmeal took about five minutes to assemble and cook. This is definitely my type of meal since I’m usually always rushing to get out the door in the mornings.
Later in the week, I cooked another meal by my beloved Ree of The Pioneer Woman. This week I tried her Chicken with Mustard Cream Sauce and served it with a sweet potato. Brett and I really loved this meal, and I have high hopes of cooking it again in the near future since it was filling, tasty and prepared and cooked within 20 minutes.
I had one of the chicken tenders leftover, so I used it the next day in a salad for lunch. In the salad was chopped spinach, cucumbers, avocado, thinly sliced red onion, sliced almonds, chia seeds and one sliced boiled egg.
This salad was totally refreshing and filled with nutrients.
My favorite find of the week was this recipe for protein cookies. I usually stray away from whey protein since I honestly can’t stand drinking the shakes. When I came across this recipe via Heidi Powell who is a trainer and transformation specialist of ABC’s Extreme Weight Loss, I just had to try it right away. It’s definitely a winner for me, and I ended up making four batches over the past week. Yes, they are that good! I’m so happy that I’ve finally found an easier way to consume whey protein.
